Chicken Teriyaki Bowls

This week has been crazy busy for some reason and writing a blog post was the last thing on my mind so I do apologize. I have been taking inventory on my “Bows & Piggys” etsy page, writing blogs for my dad’s real estate page as well as dealing with a 7.5 month old who only wants to take one nap a day (can we go back to 3 naps, please?) Anyways this meal is super easy and most of it can be made ahead of time.

Recipe – Serves 4

Ingredients

1 cup of white long grain rice

1 cucumber diced

1 red bell pepper sliced

1 head of broccoli steamed and chopped (cheat: 1 bag of frozen chopped broccoli)

1 rotisserie chicken

Teriyaki sauce

Steps

  1. Cook rice accordingly, 2 cups water to 1 cup rice (bring water to a boil, add rice and cook until the water is gone.) i added in my garlic powder, salt and pepper after adding in the rice
  2. Shred ½ of the chicken and if warm toss in ¼ cup of teriyaki sauce (if chicken is cold, heat sauce and chicken in a frying pan)
  3. Cook broccoli
  4. Dice red pepper and cucumber
  5. Assemble – rice at the bottom and the goodies on top
