Freezer Meals

Many people have asked what goes into my freezer meals and what is a freezer meal. To keep it simple a freezer meal is a meal you prepare ahead of time in a baggie or container. I also consider them a “dump all” meal meaning you dump the whole bag into a crock pot. This post will give you the ingredients + steps, along with my shopping list, of the 14 freezer meals you can prep ahead, defrost the night before and dump into your crockpot the morning of serving.

What is included in this post: Pot roast, Stroganoff, Lemon Chicken, BBQ rub shredded chicken, Lime & Honey chicken, Jalapeno Chicken, Tacos, Pulled Pork, & Vegetable Soup.

My BBQ rub along with any tools I use will be listed at the bottom of this blog post so stay tuned.

I spent roughly $120 on all ingredients breaking it down to $8.50 a bag and each bag serves 4, so roughly $2.13 a serving. Where can you go out to eat for $2.13 a person?

Shopping List

1-3lb bag of red potatoes

1 yellow onion

frozen corn (I used my food storage corn I cut off the cobs)

4 ears of corn (again from my freezer)

Vegetable Broth

1-Family pack chicken breasts, boneless/skinless (roughly 12 breasts)

olive oil

2 Lemons

2 lb Chuck or Rump roast

1 bag baby carrots

2 – Family packs ground beef (I bought mine from Sams Club)

1 package baby bellas


4 limes

4 lb Boneless Pork Shoulder

Alright you have your shopping list now its time to get ready. You need Gallon Size Freezer bags, Salt & Pepper, and garlic.

POT ROAST (makes 2 bags)

4 lb chuck or rump roast cut in half

8 red potatoes

1 bag baby carrots

4 ears of corn cut in half

vegetable broth

each bag contains: 4 red potatoes, 1/2 bag baby carrots, 4-1/2 ears of corn, 2 lb chuck/rump roast, 2 cups veggie broth, salt and pepper

Cook each bag in the crock pot on LOW for 6 hours, make sure the meat is at the bottom and the corn is on top.


Beef Stroganoff (makes 2 bags)

1 family pack ground beef (comes in two heaps next to each other)

1 package baby bellas (diced)

1/3 onion

2 tbsp garlic

each bag contains: 1 heap of ground beef, 1/2 package of baby bellas, 1/2 of the 1/3 of diced onion, 1 tbsp garlic.

Cook on low for 6-8 hours and add in 1 cup of water, during hour 5 drain & add in 1 cup of sour cream. serve over egg noodles or rice.


Lemon Chicken (makes 2 bags)


4 boneless skinless chicken breasts – cut in half

1/2 cup olive oil

2 lemons

salt & pepper

each bag contains: 4 halves of chicken aka 2 breasts, 1/4 cup olive oil, 1 lemon juiced (I add in 2 slices before juicing), salt and pepper

cook on low for 4 hours, serve with veggies or add in 1 cup of water and 1/2 a box of spaghetti for 45 minutes at the end.


BBQ Rub Shredded Chicken (makes 1 bag)

2 chicken breasts

1 cup water

1/4 cup Rub Mix (Rub mix included at bottom)

Cook on low for 4 hours then shred. add in BBQ sauce if desired and cook for an additional 30-45 minutes. 


Honey and Lime Chicken (makes 2 bags)

4 boneless skinless chicken breasts – cut in half

1/2 cup olive oil

4 limes

1/4 cup honey

salt & pepper

each bag contains: 4 halves of chicken aka 2 breasts, 1/4 cup olive oil, 2 limes juiced, 1/8 cup honey, salt and pepper

Cook on Low for 4 hours.


Jalapeno Chicken (makes 1 bag)

2 chicken breasts

1 jalapeno

1/4 cup olive oil

cook on low for 4-6 hours. layering into the crock pot chicken, jalapenos, 1 package cream cheese, 1/2 package of shredded cheddar cheese


Tacos (makes 1 bag)

1 heap of ground beef

1/8 cup taco seasoning

1/2 bag of frozen corn

2 jalapenos

1/3 onion diced

Cook on low for 4-6 hours.


Pulled Pork (Makes 2 bags)

Pork shoulder cut in half

1/2 cup Rub Mix

1 cup olive oil

Each bag contains 2lb pork shoulder, 1/2 cup olive oil and 1/4 cup of Rub Mix

Cook on low for 6-8 hours



Veggie Soup (makes 1 bag)

8 red potatoes cubed

1/3 onion

1/2 freezer corn

2 carrots diced

4 cups or 1 box veggie broth

cook in crock pot on low for 6 hours.



Let me tell you this lemon/lime press is my hero when it comes to juicing, I bought mine at homegoods.

I store mine in mason jars…

All 1/8 cup unless specified

Garlic Salt

Garlic Powder

Ground pepper (1/4 cup)

Celery Seed

Chili Powder

paprika (1/4 cup)

dark brown sugar
